Tommies

Quick, grab some fresh tomatoes from the garden (or sneak into the neighbors garden) and make this for dinner-

Roasted Tomato Spicy Pasta
2 lbs of heirloom, pear, or cherry tomatoes, cut into the same size pieces
1/4 olive oil
1/2 tsp red pepper flakes (or more if you like spice)
1 tablespoon balsamic vinegar
6 cloves of garlic chopped
1/4 cup freshly chopped basil leaves
1 teaspoon minced fresh oregano leaves
3/4 tsp salt
1/2 black pepper
1/2 lbs angel hair pasta
Garlic bread

Mix the olive oil, tomatoes, red pepper flakes, garlic, vinegar, salt and pepper in a glass casserole dish. Roast at 350 for 40-45 minutes, stirring a couple of times.

Cook the pasta according to the package directions. Add the roasted tomatoes to the pasta, add the basil and oregano. Dig in.

I cannot wait to try this, it sounds so yummy. I think it may be on the menu this weekend. It's probably going to give me heartburn, thanks pregnancy, but it sounds worth it! :)

You poor thing. If I remember right, eating anything while I was pregnant gave me heartburn...and not eating did also, for that matter. Well I hope you enjoy it and then have a few TUMS for dessert :)
