Chilly or is it Chili?


This cool weather has me in “hunker down and wear sweaters and eat chili” mode. And much to my delight I have 2 AWESOME chili recipes that will make you feel warm and snuggly from the inside out. One is quick and easy, the other requires a bit more chopping, but is totally worth the effort.

Three Bean Chili
Serves 6
INGREDIENTS:
1 orange bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
1 yellow bell pepper, seeded and chopped
1 yellow onion, coarsely chopped
2-3 cloves garlic, finely chopped
3 tbsp extra virgin olive oil
¼ teaspoon cayenne pepper
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon dried oregano
2 tablespoons chili powder
3 medium tomatoes, peeled and chopped (or one 16-ounce can of tomato sauce)
1 can kidney beans, drained and rinsed
1 can black beans, drained and rinsed
1 can pinto beans, drained and rinsed
1/2 cup of dry quinoa
Salt and freshly ground pepper, to taste
Water or tomato juice as needed
½ cup chopped fresh cilantro leaves or fresh parsley (optional)

DIRECTIONS:
1. Heat up the oil in a heavy 4-quart saucepan over medium heat. You could just use water instead, but I like to add a little fat for flavor.
2. Add the bell peppers, onion, garlic, oregano, and chili powder, cayenne, coriander, and cumin, and cook, stirring, for 5 minutes.
3. Stir in the tomatoes and all the beans, and bring to a boil. Add a little water as needed.
4. Lower the heat and simmer for 30 minutes, adding water or tomato juice as needed if too much liquid evaporates.
5. While the beans cook make the quinoa. First rinse it several times, until the water runs pretty clear. Then bowl 1 cup water and add the quinoa to it. Put a lid on it and lower the heat (basically do just the same as cooking rice). It should be done in about 20 minutes, but check occasionally and if the water is gone then the quinoa is ready.
6. Stir the cooked quinoa into the bean mixture. Add as much as you want. If you like a more soupy chili, add less, if you like a thick chili, add more. Save any leftovers, you can use them later in the week. Season with salt and black pepper, and stir in the cilantro or parsley. Enjoy.

Serving suggestions and variations:
*You can obviously use any color variation of bell pepper; the more color variety, the prettier the dish is. Same goes for the beans. You can use all black or white (Navy, Great Northern, etc.) instead of pinto. It’s really up to you, your preferences, and what you have on hand.
*Add more cayenne and chili powder to make it hotter.
*Serve with different color tortilla chips: white, red, and black/blue. Or my favorite way which is covered in Fritos and sliced avocado. Yum!

White Chili
Serves 6
INGREDIENTS
1 can of black beans
1 can of Navy beans (or Northern beans)
1 veggie bullion cube
2 tsps extra virgin olive oil
2 or 3 stalks of chopped celery
1 or 2 chopped carrots (3/4 of a cup, or so)
1 small onion, chopped
2-3 cloves garlic, finely chopped
2 cups of water
1 small can of chopped green peppers
1 tsp cumin
A shake or 2 of oregano
Salt and pepper to taste
DIRECTIONS
Heat up the oil. Add the celery, carrots, onion and garlic. Stir until the onions are translucent, about 5 minutes.
Add 2 cups of water and the veggie bullion cube, bring it to a boil and then reduce the heat and put a lid on it. Let it cook for 5 or 10 minutes, checking occasionally to see if the celery and carrots are softening.
Take a 1 cup measuring cup and dip it into the mixture , scoop about ½ cup of the liquid from the pot (try not to pick up any of the veggies if you can and watch your fingers, it will be hot)
Pour out the rest of the mixture (I just strain it) and add the ½ cup of liquid back to the pot with the veggies.
Add the cumin and oregano
Strain and rise the black beans. Add them to the mixture
Add the Navy beans and the can of green chili’s to the mixture (don’t drain the beans or the chilis)
Bring the mixture to a boil and add salt and pepper as needed
Serving suggestions and variations:
*You can change this up in so many ways. Adding bell peppers or corn or red pepper flakes for more heat.
*Serve with Fritos or tortilla chips and sliced avocado. It is deeelish.

Tiny

I was one of the parent helpers today and Henry’s preschool. It was so fun to spend the morning with such a sweet group of kiddos. And I really loved getting a glimpse into what Henry’s mornings are like there. The place has so many windows, the natural light alone is enough to make me smile. I love that someone always brings fresh flowers and that they have a bin for recycling and a bin for composting. Walls covered in kids paintings and drawings and a table covered in glitter and paint splatters and shelves of art supplies and a huge papier-mâché globe hanging above the tiny tables with tiny red chairs and the sounds of kids playing and laughing. And the snippets of conversations that I overheard-
Ben- I am working on this leeky oil pipe.
Henry- Me too. I have a tool.
Ben- Don’t worry. Oil is not explosive, just flammable.
Henry- I will not worry. I don’t mind if it is fwamable. Smelly stuff doesn’t bother me. I have cats.
It's a special place.

Someone had put a quote on the window over the sink. I read it as I cleaned a million tiny, colorful, plastic cups and pitchers. It was something like this-

“The world needs worthwhile people. To make that happen we need people that feel worthwhile.”

I’m flubbing it up, but it was something like that. And I thought for a while about the mission of the school, building character and confidence for these sweet kiddos so that they can go on to be everything that they want to be in life. And I thought about the mission of a parent. Raising a child that believes in himself. That challenges himself. That is loving and kind and sensitive. That understands that he is part of a community and contributes and gives of himself. It all, for that moment, seemed wrapped up nicely in that quote. We are all worthwhile, whether we recognize it or not. As a parent it is my job to make sure that my child recognizes it. And in that room, at that time, the heaviness of that responsibility didn’t bother me at all. I guess maybe that is what happens when you are part of a community, supporting each other with a common goal. Or maybe that just happens when you love someone so much that all you see is the promise and possibility. Either way, it felt really good.

Happy on a Saturday

I've been on the waiting list for the Audacity of Hope at our library for over a month now. Then yesterday, out of frustration I went to the State of Kansas Library online site to see if maybe they had it in KC or Topeka and discovered that I could download the spoken word version of it for free at any time. And there are thousands of other books that you can do the same thing with. If your in Kansas go here, if you are in another state do a google search. All you need is a library card. I'm beyond thrilled...8 hours at a computer every day....so many books...I'm so excited. Now, if I could only find a scratch and stiff sticker that smells like a library book....

Things that make me happy Thursday

My friend Emily told me that I should bring back the Things that make me happy Thursdays. I didn't even realize it had been that long since I last did one and honestly with the nasty weather and the fact that I only got 4 hours of sleep last night I am feeling pretty uninspired right now. But I can find something that I love to blog about....I love baby shoes. This week out of the blue I am going crazy with Henry's shoes. His feet are growing at records speeds and even his frog boots are getting to small {ah, moment of silence for the frog boots}. So, we are moving on. Size 8 here we come! Today I ordered new boots:And new kicks:
Everything is cuter in miniature. :)

I feel like posting today even though I don't have anything to talk about. Oh, who am I kidding, I always have something to talk about but most of the time it isn't anything you would want to read about. There is all kinds of stories from NPR today that I could rant about. Or I could complain about my lack of sleep or tell you all about the books I am reading or pillow I made last week...but truth be told, I don't really feel like talking about that stuff anyway. What I do like is posting pictures of the new meals that I am going to try this week. Heart


When my Aunt Cindy died she left all her jewelry to her nieces. She had a LOT of jewelry. Mostly costume jewelry that was as big and bright as the amazing woman that wore it. She loved holiday’s. At Christmastime I don’t think there was a piece of furniture in her house that was not adorned with something red and green. She even celebrated the summer with flamingo earrings and sunshine sandals. So, when I looked over her jewelry box I decided that I wanted to find a piece of jewlry to wear for every holiday…well, it turned out that all of my cousins (and a couple of unauthorized Aunts) had the same idea. But I was able to hang on to one gem, a red plastic heart pin. I have been wearing it on Valentines Day every year since she died. Because that is what she did. Because today is about love. Because I loved her so much. But today I decided that I don’t think I should save this pin for just February 14th anymore. I think that this red plastic heart pin actually goes with every outfit on every day. So I can be reminded to celebrate her love and her life, and my love and my life everyday. That makes me happy.

Paper Flowers



I love paper flowers. Back in 2001, when I was planning my wedding, I made a ton of paper flowers. I wanted to use them for my bouquets and centerpieces. I wanted to put them in my hair and in my bridesmaids hair....but after days and days of work I realized that I just didn't have the time to make that many flowers. This year Henry and I made paper poinsettias which turned pretty nice and would have probably made lovely centerpieces for a winter wedding. It took a while but not as long as my efforts years ago. I think I might use the same idea to make some white and light green flowers to fill the beautiful white ceramic pitcher that my parents gave me for Christmas.

I asked my coworker what her New Years Resolution is, she said she doesn't believe in resolutions because she never keeps them anyway. I said, yeah but just because you fail at something doesn't mean that you should stop trying. Resolving to live a better life by flossing your teeth or losing weight or eating more vegetables is something that people should do all the time, not just once a year. I felt a little sad for my coworker because I am pretty sure that she is not doing anything to actively make her life better, she is just going along with things as they are. A scary notion for me. I firmly believe that your life is what you make of it. If you make no effort and take no risks for yourself then in the end the only thing steering your course is what other people do to you. An even scarier notion.

My New Years Resolution list is long and lovely and full of hope and promise for this journey I am on called LAURA KELLY'S ONE LIFE. I've got some stuff I'll share but most of it I think I'll keep for myself.

This holiday season has really been an eye-opening experience for me. I’ll spare you the details and just say that in the end I have realized quite a bit about myself and my family. There have been disappointing and lonely moments but I am looking at it as a much needed push towards a more organized, independent and thoughtful life. And all of these recent discoveries have come just in time for New Years Resolutions, which may just give me the much needed boost for some positive change.

It is the end of year and in an accounting office that means crazy hours, stress headaches, not taking lunch breaks and doing a lot of complaining. A few of my resolutions center around my experience at work, which is important to me because I spend most of my time at work. I do not really feel a deep connection to my coworkers, but that is okay because it is a job, not a social gathering. My goals this year for my job are to not let myself get stressed out by it {it’s a job in a billing office….not worth the kind of emotional energy I am currently putting into it}. To not be such a pushover with people {it is shocking to me to look at my workload in comparison to everyone else. It would seem like the pay out for hard work is more work, but in many ways I bring it onto myself by not speaking up about the imbalance}. And, lastly, stop participating in office politics and gossip. I feel best about myself when I come to work, do what I am supposed to do, meet my deadlines, stay focused, am friendly and positive, and do a good job.

Another very important goal for 2008 is to work on my relationships- foster some new friendships, to strengthen some that I value and have let slide and remove myself from the ones that are not fulfilling and leave me feeling frustrated and exhausted (I have many of those). This is going to be SUPER hard for me because A) I have no free time. B) I have a slight fear of commitment when it comes to friendships. Too many people have let me down in the past (hence the multiple frustrating and exhausting friendships resolution). C) I am not good at putting up boundaries without just completely cutting people off. In some cases I think I should just cut people off, and actually this fall I did that with two friendships that were NOT working for me. I felt and still feel a little guilty about it, but I try to remind myself that I do not have to like everyone and everyone does not have to like me.

Of course, losing weight/being healthy is high up on my list for 2008. I am really feeling the pressure now because this year we are going to the beach and I want to feel good in my swimsuit and be comfortable on a long road trip. I feel good about the healthy part. Since starting this plant-based diet my energy level is up, my skin is clearer, my hair is shinier, I don’t have heartburn anymore, and I don’t crash after every meal. I need to exercise though, so starting on Monday I am going to the gym in the morning. Before I got pregnant I exercised every day, then I hit my first trimester and pretty much slept and threw up all day….I felt good working out and while working out every day is not really an option given my busy schedule, I think I can fit it in 4 days a week, and that will do for now.

this time of year

because I love lists. and fresh starts. and seeing my breath in the morning. and scarves. and hot chocolate with peppermint marshmallows. and the grass sparkling in the morning sunlight. the smell of evergreen trees and pine cones. over sized sweaters. homemade snowflakes on the window. lights and nat king cole and talk of reindeer and santa claus. red and green and red and green. decorating cookies. henry crawling under our blankets at night. fuzzy slippers. pink noses and cheeks. how the grinch stole christmas and all the claymation christmas shows from when i was a kid. the sound of the furnace running. visits from loved ones. christmas trees strapped to the tops of cars. an excuse to make homemade gifts out of gumdrops and to snuggle under the blanket with my hubby. henry’s cold nose on my cheek when I get a kiss. the stars seem brighter. the air seems fresher. people seem happier.

Thursday Love

Here's the thing. I love Anthropologie. I want to live in the rooms in the catalogs and wear all the clothes. Also, I love mugs. I know, it's a little strange but I just do. I have a lot of mugs...so many that they wouldn't all fit in the tiny kitchen in our last house. A few years ago we went to Prince Edward Island on vacation and I came home with 5 mugs. I have never considered myself a collector of anything really, but I suppose I need to come to terms with my mug addiction.
This week my love of these two things came together and the result was me spending entirely too much money on something that I will likely break in the next 6 months. Oh well. I ordered these birdy mugs on Monday. I got the package this morning....cutest ever! Now they have plates and bowls in the same pattern....this is not good folks. Would it be irresponsible of me to get a second job to pay for my Anthropologie addiction?

Things that make me happy Thursday

Cupcakes are the most versatile food. You can dress them up or dress them down. You can bring them to a kid's birthday party or serve them at a wedding. Make um for a holiday or just for the hell of it. They are fun for grownups and kiddos. They make people happy. That is why I love them. Well, that and there is just something so very lovely about having a tiny cake in your hand that you can eat without utensils and that will most likely leave icing on your nose.
For me some days are just cupcake days...it's like people that can sense when it is going to rain, I can sense when a cupcake needs to be made. This weekend is a cupcake weekend. I am leaning towards the chocolate cake with coconut icing ones in the picture above because they are just about the most delicious cupcakes on the planet. I think this time I will add some chopped almonds on top to make them officially "Almond Joy Cupcakes". But there are other options. One of my cupcake cookbooks has a recipe for Top Hats which are chocolate cupcakes with a huge swirl of marshmallow icing on them that are dipped in a chocolate sauce that hardens as it cools...HELLO! Yup, that one is on the list. And I still need to figure out my failed red velvet recipe. Either way cupcakes and Laura will be together this weekend and if that doesn't make me happy then nothin' will.

*Side note: A couple of people have emailed me asking where I get the cupcake papers for my cupcakes. I get them here. They are called Nut and Party cups. Enjoy!

Things that make me happy Thursday

I had my third exam today. I’ve realized why it is much much better to finish college as a young person. Frankly, I just don’t have time for this crap. Everyday I have a choice-jump in the leaves with my son and husband or study how the notochord forms in chick embryos….it’s a no brainer. So, again the exam creeps up on me and again I go in unprepared and only half invested. Whatever, I don’t think I failed it and that is good enough for me….I guess that is a function of age too, I really could care less if I get an A or C I just want to pass it and knock one more shitty class off the list so I can finish up this seemingly never-ending college experience. But the exam is over and we only have 8 classes left in the semester. And that makes me happy.

Preparing for an exam is stressful but it’s hard to be too bummed about it. I woke up this morning feeling a little more rested, went to bed early and my hubby took care of Henry’s nighttime calls so that I could be rested for my test. On our drive to Gigi and Grandpa’s this morning Henry was cracking me up talking about how he needs more Mentholatum (I don’t even know how to spell it so I really can’t figure out how a not-quite-2-year-old could figure out how to say it). The cool air met the warm river water and caused a light fog to form over the river making our drive over the bridge this morning quite lovely. The sun rising in the background and the red, yellow and orange trees with the fog was picturesque and made me wish that I had my camera, but a photo couldn’t have captured how lovely it was in real life, so instead we just drove really slow and I explained the “smoke on river?” to Henry. I love that I can finally have conversations with this kid. I remember not quite 2 years ago looking at him and wishing I could understand what he needed, now he can tell me what he needs (apparently today it's Mentholatum) and that makes me happy.

Once we got off the bridge I turned up NPR just in time for Carl Kasell to tell us that the Phelps clan might just be getting a tiny slice of what they deserve from a family in Baltimore. Apparently they protested at the funeral of a soldier who was killed in Iraq and the father of that soldier sued them and won-$11 million dollars in damages. The family will of course fight the ruling but you know, I am eternally optimistic and believe that people who fill their lives full of hate will eventually get their come-up-ins. Karma will get ya. The Phelps are disgusting human beings that ooze a message of hate so foul and hurtful that $11 million doesn’t even really touch it but it’s a start and quite frankly I am just thrilled that someone had the guts to stand up to them. And this makes me very happy.

When I die they will laugh about my insane cookbook collection

or....If I don't show up to work come check on me to make sure I wasn't crushed by my insane cookbook collection. Either title will work.
I got a coupon from Amazon for being such a great customer and I got an email from Compassionate Cooks about Colleen's latest cookbook and so I decided it must be a sign and I ordered two more cookbooks. That's it! I must stop now. I have more cookbooks than I know what to do with and probably 80 recipes I have found online that I have printed off and need to try. But today, for my Things that make me happy post rather than focusing on my addiction to cookbooks I will focus on the fact that they make me Oh So Happy! And the fact that I have a wonderful spouse that never comments on the fact that my cookbooks and recipes take up 1/3 of our kitchen counter. Love you honey!

Things That Make Me Happy Thursday Part 2

I got on the subject of San Francisco this afternoon and it brought back all my great memories of our trip to SF many many years ago. We weren't married at the time but so far this is the closest we have come to a honeymoon. There is a ton of great stuff going on in the Bay Area, we didn't even scratch the surface during our visit. Alcatraz was really cool. Shopping in Berkeley was fun. But my favorite part of our trip was Muir Woods. That is a place I could go back to over and over again. It was breathtaking.

Things that make me happy Thursday

*I had to put Henry in a sweatshirt and a jacket this morning. The breeze was cool and we could see our breath. Henry would take a breath and say “teem Mama. Hot.” He thought it was steam, like his hot veggies at dinner. *The leaves are just starting to change. On my way to work I spotted little specks of yellow in the green canopy over the streets in our neighborhood. *We have a maple tree in our front yard. I peak outside every morning, anticipating its fall show---what color will it be? *The Halloween decorations are up at Gigi and Grandpa’s house. “Keleton keleton” Henry yelled when we pulled into their drive this morning. Then he grabbed my hand as we walked into the house and pulled me from room to room-“Bats. Bumpkin. Bumpkin. Ghost. Bumpkin lights….” *Many of the decorations at my Mom’s house I made with my sisters when we were kids. Construction paper pumpkins and spiders made from pipe cleaners. I can’t wait to fill my house with homemade decorations made by my children. Until then I will just have to decorate myself and I am thinking that candy wreath and paper lantern pumpkins (above) are a great start*Rolling Prairie is still going strong; we still get our bags of locally grown produce once a week. I am hoping for butternut squash, raspberries and green beans this week. I have roasted squash with a raspberry dressing, cornbread stuffing, green beans and mashed potatoes and gravy on the menu for next week. *Plans are underway for Halloween care packages for my sisters. Chocolate truffles rolled in orange sprinkles are packaged and ready to mail*I found a porch swing made of sustainably harvested wood from South America and the best part is that it is on sale. We are going to order it this weekend. I have always wanted a house with a porch swing. *Halloween cupcake ideas are flowing in. My favorites are above....especially the monster one. I think we may have to do a trial run this weekend ;) *I am listening to the new Radiohead CD *We are going to the pumpkin patch with my parents and Aunt Kelly next weekend. Pumpkin carving will follow. I am thinking of doing a dot pumpkin, like the one in the center of my mosaic. * I put some mums on our front porch. *Wade taught me how to use photoshop *41 days until my sisters arrive. *Grandpa is off work today so Henry gets to spend the whole day with both of his Grandparents {and my Mom gets a break}. *I am going to leave for my lunch break to buy some pumpkin spice candles from our favorite candle shop. The house will smell like October tonight :) Happy Thursday to you.

Things that make me happy Thursday

Today has been a difficult day for me to come up with my things that make me happy Thursday post. It has been a very very long day and the end is not in sight as I have to come back into work this evening after Henry goes to bed. But, I suppose these kind of days are precisely what things that make me happy Thursdays are for.
So what is getting me through the day?

Iced coffee. Fiest, MF Doom, Dead Prez, Nina Simone and Otis Redding. Short breaks for blogging. The most recent Radio Lab podcast. Knowing that Henry is with Papa at the toy store right now having a great time (apparently playing with puppets with Wade, his favorite puppet?- Dr. Moody). Post-test relief, even if it means a bad grade.

Sorry...that's all I got. It's like trying to squeeze water out of a pebble at this point. Hopefully I'll really rock it out next Thursday. Hope you had a good one.

We got a taste of Fall last weekend. This is my favorite time of year. I had to wear my sweatshirt on our Sunday morning bike ride. Pumpkins are lining up outside of grocery stores, people are talking about football and Halloween costumes, and I spotted some leaves changing color on campus. Sweaters and carmel apples (or carmel apple cupcakes in our case), sneakers and candy corns and sunflowers and getting dark earlier and seeing your breath in the mornings and soup and cool breezes and pink cheeks and scarves and snuggling....

Baby toes. Podcasts. Open-minded people. The light in the eyes of a new mom. My coworker that makes me coffee every morning. Hearing the NFL jingle on a cool Sunday afternoon. That my husband spent hours filling my ipod with songs he thought I would like. Enormous avocados. The smell of Fall. Nice neighbors that bring us homemade bread and sunflower arrangements from their back yard. Pumpkins in front of grocery stores. Henry acting like a fish in the bathtub. Turning off the air conditioner and opening the windows. Curbside recycling. Trying to do my part. Events that take your life in new, exciting directions. Migrating butterflies. Believing in yourself. Planning for the holidays. Songs that make you dance at your desk. Reconnecting with old friends. The feeling you get after finishing an exam. New haircuts. Being brave.

Time travel


Does it happen to you? Something triggers it, a sound or a smell or the weather or someone you run into...and your brain picks you up and drops you back in a moment. It isn't just a memory, it is a journey back, with all the feelings from that time in your life. I like to call it feeling a memory. For me, it is one of the best things in life. I've tried to induce that feeling before. Just last year I found an old shampoo bottle from high school in one of my million bathroom goodies bins and got all excited. I opened the bottle in sweet anticipation of what was to come. I wondered what part of my high school experience I would travel to. Would I feel those awful insecurities again? Or maybe that incredible freedom you won't recognize or appreciate until you are a 30 year old women with a husband, a child and a mortgage. It didn't work. I recognized the smell but stayed right in my seat.

Last night the breeze caught me just right and took me to our old house on New Hampshire. It was a very old house with windows everywhere and screen doors on both the West and East side. When the breeze would blow just right we could lay in bed and feel like we were outside. I was back in our bed on a cold sunny morning. The breeze was perfect, it blew the wind chimes and made the leaves dance in the trees. I could hear the leaves blowing, I could smell the breeze, I could feel the cold blankets under my legs. I felt the freedom of being young and having no obligations on a Sunday morning. Just for a second...

Wade changed the shower curtain liner this morning. The bathroom smells like new plastic. One deep breath and I am back in prenatal classes at the hospital. We are sitting in class with 6 other ladies, all with their hands on their bellies and their hearts on the sleeves. Feeling nervous, excited, joyful, uncertain, courageous, and new depth of love and commitment. Wade is next to me. He is there because he knows what it means to me and looks at me with loving appreciation, pride and concern. He obligingly feels my belly with every kick and hops up whenever I shift uncomfortably or make sound. Then we are leaving class. We are in the hospital parking lot. It is late fall so the sun has set. The air is cold, it smells like winter. It is quiet, most people are at home snuggled in. The sky is clear and the even the stars look a little cold; like tiny ice crystals in a dark sky. We carry our pillows and blankets and I think about how in a few weeks we will be walking into this building with our blankets and pillows for a whole different reason and we will be transformed from two to three. And then the feeling is gone and I spend the whole night trying to figure out how to go back. I sit on the toilet with my eyes closed and the shower curtain on my nose. Nothing. It is like the giddy feeling you get when you are riding in a car and go over a hill but don't realize that you are going over the hill and your stomach jumps and your throat tightens up. No matter how many hills you go over, you won't get that feeling back until you stop paying attention.

Things that make me happy Thursdays

A friend just emailed me to tell me that my last 3 posts have been grumpy. She wasn't complaining, she actually said she likes my gripe posts (eh....I don't know about all that) but I don't want for my blog to be a pile of complaints.
